Almond-crusted salmon with roasted vegetables

A salmon steak topped with herbs and ground almonds, roasted with zucchini and bell pepper.

Rico's note: Keep ground almonds in the pantry just for this crust — it turns a simple salmon into a Friday-night dinner.

Ingredients

  • 1 salmon steak (200 g / 7 oz)
  • 30 g (1 oz) ground almonds
  • 1 handful of chopped fresh parsley and cilantro (10 g)
  • 2 cloves garlic, minced (6 g)
  • 1 zucchini, sliced into rounds (200 g / 7 oz)
  • 1 red bell pepper, cut into strips (150 g / 5½ oz)
  • 1 handful of cherry tomatoes (80 g / 2¾ oz)
  • 1 tbsp olive oil (10 g)
  • lemon juice, to taste (10 g)
  • salt and pepper, to taste

Method

  1. Preheat the oven to 190 °C (375 °F) and line a baking sheet with parchment paper.
  2. In a bowl, mix the ground almonds with the parsley, cilantro and half the minced garlic.
