Air fryer walnut-crusted salmon

A 22-minute dinner with omega-3 and a seriously crunchy crust.

Rico's note: Friday night calls for something that looks restaurant-made but takes very little work — this salmon is exactly that.

Ingredients

  • 2 salmon fillets (360 g / 12½ oz) — 180 g each
  • 50 g (1¾ oz) walnuts, roughly chopped
  • 10 g chopped fresh parsley
  • 1 tsp dried thyme (1 g)
  • 1½ tbsp Dijon mustard (15 g / ½ oz)
  • 1 tbsp extra-virgin olive oil (10 g)
  • salt and black pepper, to taste

Method

  1. Pat the salmon fillets dry with a paper towel.
  2. Spread each fillet with Dijon mustard.
