Air fryer chickpea curry

A creamy chickpea and spinach curry that almost makes itself in the air fryer.

Rico's note: Make this when you want a vegetarian dinner without standing at the stove — everything goes into the same dish.

Ingredients

  • 400 g (14 oz) cooked chickpeas, drained
  • 100 g (3½ oz) fresh spinach
  • 100 ml (½ cup) coconut milk
  • 1 tsp curry powder (2 g)
  • 1 tsp turmeric (3 g)
  • 2 cloves garlic, minced (6 g)
  • 10 g fresh ginger, grated
  • 1 tbsp olive oil (15 g / ½ oz)
  • water, as needed — to adjust the sauce, if needed

Method

  1. In a small ovenproof dish that fits in the air fryer, combine the chickpeas, spinach, coconut milk, curry powder, turmeric, garlic and ginger.
  2. Stir everything with a spoon until the chickpeas are well coated in the sauce.
