Ingredients
- 96 g (3½ oz) almond flour
- 150 g (5½ oz) rice flour
- 1 tsp ground cinnamon (2.6 g)
- ½ tsp ground cloves (2 g)
- ½ tsp grated nutmeg (1 g)
- 70 g (2½ oz) white or brown sugar — no added sugar: 100 g erythritol
- 1 tbsp baking powder (12 g)
- 3 eggs (150 g / 5½ oz)
- 120 ml (½ cup) coconut milk
- 55 g (2 oz) coconut oil
In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.
Method
- Preheat the oven to 180 °C (350 °F) and grease the pan.
- Combine all the dry ingredients: the flours, spices, sugar and baking powder.
