Whole orange cake

Made with the whole orange, peel and all, for an intense flavor.

Rico's note: The trick is blending the whole orange — the cake comes out much moister than with juice alone.

Ingredients

  • 1 whole orange, washed, seeded and with the white pith removed (200 g / 7 oz)
  • 3 eggs (150 g / 5½ oz)
  • ½ cup coconut oil (100 g / 3½ oz)
  • ⅔ cup sugar (135 g / 5 oz) — no added sugar: ¾ cup xylitol (or erythritol) (135 g)
  • 1½ cups rice flour (237 g / 8½ oz)
  • ½ cup sweet cassava starch, polvilho doce (60 g / 2 oz)
  • 1 tbsp baking powder (12 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect. Keep it away from dogs: xylitol is toxic to them.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a tube pan.
  2. Wash the orange well, cut it into quarters and remove the seeds and the white pith in the center, which is bitter.
