White chocolate lemon cake

A citrusy lemon cake with pieces of white chocolate.

Rico's note: The contrast between tart lemon and sweet white chocolate surprises anyone trying it for the first time.

Ingredients

  • 1 cup coconut flour (112 g / 4 oz)
  • ⅔ cup sugar (135 g / 5 oz) — no added sugar: 1 cup erythritol (190 g)
  • 1 tbsp baking powder (12 g)
  • 6 eggs (300 g / 10½ oz)
  • ½ cup coconut oil (103 g / 3¾ oz)
  • ½ cup coconut milk (120 g / 4 oz)
  • zest and juice of 2 lemons, to taste
  • ½ cup white chocolate pieces (85 g / 3 oz) — no added sugar: sugar-free white chocolate pieces

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease the pan.
  2. Mix the dry ingredients: the coconut flour, sugar and baking powder.
