White chocolate cake

Ingredients

  • 100 g (3½ oz) white chocolate — no added sugar: sugar-free white chocolate
  • 144 g (5 oz) almond flour
  • 56 g (2 oz) coconut flour
  • 70 g (2½ oz) sugar — no added sugar: 100 g erythritol
  • 1 tbsp baking powder (14 g)
  • 4 eggs (200 g / 7 oz)
  • 73 g (2½ oz) coconut oil
  • 120 ml (½ cup) unsweetened almond milk
  • 1 lemon, zest only (2 g) — optional

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a round pan.
  2. Melt the white chocolate in a double boiler or in the microwave in 20-second bursts, stirring each time.
