Watercress soup

A creamy soup with watercress's signature peppery bite.

Rico's note: If you've never had watercress in soup, give it a try — and make it whenever you find it fresh at the market.

Ingredients

  • 1 bunch of watercress (200 g / 7 oz)
  • 1 potato (150 g / 5½ oz)
  • 1 onion (80 g / 2¾ oz)
  • 1 clove garlic (5 g)
  • 1½ tbsp olive oil (15 g / ½ oz)
  • water and salt, as needed

Method

  1. Sauté the onion and garlic in a drizzle of olive oil for 4 minutes.
  2. Add the diced potato, cover with water and season with salt.
