Simple, fluffy and packed with chips — the cake everyone knows.

Ingredients

  • 192 g (7 oz) almond flour
  • 70 g (2½ oz) white or brown sugar — no added sugar: 100 g erythritol
  • 1 tbsp baking powder (14 g)
  • 3 eggs (150 g / 5½ oz)
  • 73 g (2½ oz) coconut oil
  • 60 ml (¼ cup) unsweetened almond milk
  • 1 tsp vanilla extract (4 g)
  • 85 g (3 oz) dark chocolate chips — no added sugar: sugar-free dark chocolate chips

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a pan.
  2. In a bowl, mix the almond flour, sugar and baking powder.
