No-added-sugar version: 217 kcal and 2.3 g sugars per serving.

Values are for the first option listed in the ingredients; substitutions and variations change them. Carbs exclude fiber; energy uses the EU conversion factors (fiber at 2 kcal/g). Quantities and times are a starting point: adjust them to your taste. Two things don't change: poultry and ground meat must be cooked all the way through, and allergens — always check the labels.

Vanilla and cocoa marble loaf

Soft slices with a marbled swirl, gluten-free.

Rico's note: Slice it on Sunday and freeze it in small bags — that takes care of breakfast for the whole week.

Ingredients

  • 2 cups almond flour (200 g / 7 oz)
  • ½ cup coconut flour (56 g / 2 oz)
  • ½ cup white or brown sugar (100 g / 3½ oz) — no added sugar: ¾ cup erythritol (135 g)
  • 2 tsp baking powder (8 g)
  • 4 eggs (200 g / 7 oz)
  • ½ cup coconut milk (120 g / 4 oz)
  • ⅓ cup melted coconut oil (67 g / 2¼ oz)
  • 1 tsp vanilla extract (4 g)
  • 2 tbsp 100% cocoa powder (15 g / ½ oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a loaf pan.
  2. In a bowl, mix the almond flour, coconut flour, sugar and baking powder.
