Turnip greens soup with sweet potato

A beloved Portuguese soup, with a sweeter touch from the sweet potato.

Rico's note: A cozy winter-night soup, but quicker to make.

Ingredients

  • 250 g (9 oz) turnip greens (grelos)
  • 1 sweet potato (200 g / 7 oz)
  • 2 cloves garlic (10 g)
  • 1 onion (100 g / 3½ oz)
  • 1½ tbsp olive oil (15 g / ½ oz)
  • water and salt, as needed

Method

  1. Sauté the chopped onion and garlic in 1 tbsp of the olive oil for 4 minutes.
  2. Add the diced sweet potato, cover with water and season with salt.
