Turnip and carrot soup

Understated and comforting, with no big surprises — in a good way.

Rico's note: The soup for when you have no time to think: turnip, carrot, potato, whatever's in the basket. It never fails.

Ingredients

  • 2 medium turnips, diced (200 g / 7 oz)
  • 3 carrots, sliced into rounds (240 g / 8½ oz)
  • 1 potato, diced (150 g / 5½ oz)
  • 1 chopped onion (150 g / 5½ oz)
  • 2 cloves garlic, minced (6 g)
  • 1½ liters (6¼ cups) water
  • 3 tbsp olive oil (30 g / 1 oz)
  • salt, to taste

Method

  1. Sauté the onion and garlic in the olive oil until soft.
  2. Add the diced turnips, sliced carrots and diced potato.
