Tuna rice balls

A simple snack of tuna, rice and egg, pan-fried.

Rico's note: Make a big batch on Sunday — a snack to eat cold, straight from the fridge, between meetings.

Ingredients

  • 200 g (7 oz) cooked white rice
  • 3 cans of tuna in water, drained (240 g / 8½ oz)
  • 60 g (2 oz) reduced-fat cream cheese
  • 3 eggs (150 g / 5½ oz)
  • salt and pepper, to taste
  • low-fat Greek yogurt, lemon, parsley, salt, pepper and garlic powder — yogurt sauce on the side, optional, not included in the macros
  • olive oil, for greasing

Method

  1. In a bowl, combine the rice, drained tuna, cream cheese and eggs. Season with salt and pepper and mix everything really well.
  2. Shape the mixture into small balls with your hands.
