Tomato and basil soup

The Italian classic, made with fresh vegetables only.

Rico's note: Use the ripest tomatoes you can find — the redder and softer, the better this soup turns out, even if they look ugly in the fruit bowl.

Ingredients

  • 800 g (1¾ lb) ripe tomato, chopped
  • 1 potato, diced (150 g / 5½ oz)
  • 1 chopped onion (150 g / 5½ oz)
  • 3 cloves garlic, minced (9 g)
  • 1 handful of fresh basil (10 g)
  • 1 liter (4¼ cups) water
  • 2 tbsp olive oil (20 g / ¾ oz)
  • salt and black pepper, to taste

Method

  1. Sauté the onion and garlic in the olive oil.
  2. Add the chopped tomatoes and let them cook down for 5 minutes.
