Tiramisu baked oats

A whole pan of coffee baked oats with a creamy topping, enough for the week.

Rico's note: Bake this pan on Sunday and breakfast is practically sorted for the whole week.

Ingredients

  • 2 ripe bananas (236 g / 8½ oz)
  • 2 cups rolled oats (250 g / 9 oz)
  • 1 cup unsweetened almond milk (250 g / 9 oz)
  • ½ cup coffee (125 g / 4½ oz)
  • 30 g (1 oz) dark chocolate chips — optional
  • 200 g (7 oz) low-fat Greek yogurt — for the topping
  • 50 g (1¾ oz) vanilla protein powder — for the topping
  • 10 g reduced-fat cocoa powder — for sprinkling
  • olive oil, for greasing

Method

  1. Preheat the oven to 180 °C (350 °F).
  2. Mash the bananas well in a large bowl.
