Swiss chard and potato soup

Simple, green and ready in twenty minutes.

Rico's note: Swiss chard is one of the most useful greens there is — it cooks quickly and doesn't turn bitter like some cabbages if you don't overcook it.

Ingredients

  • 400 g (14 oz) Swiss chard, chopped
  • 2 potatoes, cut into pieces (300 g / 10½ oz)
  • 1 onion, quartered (150 g / 5½ oz)
  • 2 cloves garlic (6 g)
  • 1½ liters (6¼ cups) water
  • 3 tbsp olive oil (30 g / 1 oz)
  • salt, to taste

Method

  1. Cook the potatoes with the onion and garlic in salted water for 15 minutes.
  2. Once they're tender, crush them lightly with a fork.
