Sweet potato and ginger soup

Just the right amount of sweetness, with ginger adding a gentle heat.

Rico's note: A combination born from leftovers — sweet potato and ginger from another recipe. It's so good it deserves a permanent spot.

Ingredients

  • 2 large sweet potatoes, diced (500 g / 1 lb)
  • 1 carrots, sliced into rounds (80 g / 2¾ oz)
  • 3 cm (1¼ in) fresh ginger, grated (15 g / ½ oz)
  • 1 chopped onion (150 g / 5½ oz)
  • 1 liter (4¼ cups) water
  • 2 tbsp olive oil (20 g / ¾ oz)
  • salt and black pepper, to taste

Method

  1. Sauté the onion and grated ginger in the olive oil over medium heat until fragrant.
  2. Add the diced sweet potato and sliced carrot.
