Sweet banana scramble

Like scrambled eggs, but sweet — a different way to eat banana and egg.

Rico's note: On mornings when all you have is a banana and an egg, this saves breakfast in five minutes on the stove.

Ingredients

  • ½ ripe banana (60 g / 2 oz)
  • 1 egg (50 g / 1¾ oz)
  • 25 g (1 oz) protein powder
  • cinnamon, to taste
  • sugar, to taste — optional; no added sugar: sweetener to taste
  • olive oil, for greasing

Method

  1. In a bowl, mash the banana with a fork until smooth.
  2. Add the egg, protein powder and cinnamon, and mix well until you have a smooth batter.
