Strawberry chunk cake

Fluffy almond cake studded with chunks of fresh strawberry.

Rico's note: Perfect for when strawberries are cheap — it keeps well all week in the fridge.

Ingredients

  • 150 g (5½ oz) fresh strawberries, chopped
  • 192 g (7 oz) almond flour
  • 60 g (2 oz) sweet cassava starch (polvilho doce)
  • 105 g (3¾ oz) sugar — no added sugar: 150 g erythritol
  • 1 tbsp baking powder (14 g)
  • 3 eggs (150 g / 5½ oz)
  • 73 g (2½ oz) coconut oil
  • 60 ml (¼ cup) unsweetened almond milk
  • 1 tsp vanilla extract (4 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a round cake pan.
  2. In a bowl, combine the almond flour, cassava starch, sugar and baking powder.
