Simplified octopus rice

With precooked octopus, this soupy rice is ready in 40 minutes.

Rico's note: Frozen octopus comes already tender, so this is no longer just a Sunday dish.

Ingredients

  • 600 g (1¼ lb) precooked octopus, in pieces — frozen (raw) or precooked
  • 1 onion (120 g / 4 oz)
  • 2 cloves garlic (6 g)
  • 400 g (14 oz) diced tomatoes
  • 300 g (10½ oz) carolino rice (or other medium-grain rice), uncooked
  • 1 tsp sweet paprika (2 g)
  • 2 tbsp olive oil (20 g / ¾ oz)
  • 700 ml (3 cups) water or octopus cooking liquid
  • bay leaf, salt and parsley, to taste

Method

  1. If the octopus isn't cooked yet, simmer it in water until tender and cut it into pieces.
  2. Heat the olive oil in a saucepan. Sauté the onion and garlic for 4 minutes.
