Savoy cabbage and carrot soup

Simple, colorful and ready in half an hour.

Rico's note: On busy weeks, put this soup on the stove while you shower after training — it's ready by the time you're out.

Ingredients

  • 400 g (14 oz) savoy cabbage, cut into strips
  • 2 potatoes, diced (300 g / 10½ oz)
  • 1 carrots, sliced into rounds (80 g / 2¾ oz)
  • 1 chopped onion (150 g / 5½ oz)
  • 2 cloves garlic, minced (6 g)
  • 1½ liters (6¼ cups) water
  • 3 tbsp olive oil (30 g / 1 oz)
  • salt, to taste

Method

  1. Sauté the onion and garlic in the olive oil until soft.
  2. Add the diced potatoes and sliced carrot and cover with the water.
