Savory Portuguese cornbread (broa)
A quick cornbread, with no yeast and no waiting.
Ingredients
- 1½ cups fine cornmeal (225 g / 8 oz)
- ½ cup sweet cassava starch, polvilho doce (60 g / 2 oz)
- ¼ cup coconut flour (27 g / 1 oz)
- 1 tbsp sugar (12 g) — no added sugar: 2 tbsp erythritol (20 g)
- 1 tbsp baking powder (12 g)
- 1 tsp salt (6 g)
- 1 tsp fennel seeds (2 g) — optional
- 3 eggs (150 g / 5½ oz)
- ½ cup coconut milk (120 g / 4 oz)
- ¼ cup melted coconut oil (55 g / 2 oz)
In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.
Method
- Preheat the oven to 180 °C (350 °F). Grease a round cake pan or a broa pan.
- In a bowl, mix all the dry ingredients: the cornmeal, polvilho, coconut flour, sugar, baking powder, salt and fennel seeds, if using.
