Sautéed asparagus with fried egg

Ingredients

  • 1 bunch of fresh asparagus (200 g / 7 oz)
  • 2 large eggs (100 g / 3½ oz)
  • 1 clove garlic, finely minced (3 g)
  • 1 tbsp extra-virgin olive oil (10 g)
  • ¼ lemon (juice only, optional) (8 g)
  • salt and black pepper, to taste

Method

  1. Wash the asparagus and snap off the woody ends. If the spears are thick, lightly peel the lower part of the stalks.
  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and let it sizzle for 30 seconds.
