Salt cod with chickpeas in the Varoma

The classic salt cod with chickpeas, steamed in twenty minutes.

Ingredients

  • 4 soaked (desalted) salt cod steaks (600 g / 1¼ lb)
  • 400 g (14 oz) cooked chickpeas, drained
  • 1 onion (100 g / 3½ oz) — thinly sliced into rounds
  • 2 tbsp olive oil (20 g / ¾ oz)
  • 1 tbsp vinegar (15 g / ½ oz)
  • 1 bay leaf (1 g)
  • parsley and pepper, to taste

Method

  1. In a saucepan, warm the cooked chickpeas with a little water until heated through.
  2. In a separate pot with a steamer basket, place the salt cod over boiling water with the bay leaf and steam for 12 to 15 minutes, until it flakes easily with a fork.
