Ingredients
- 200 g (7 oz) fresh salmon, steak or loin
- 100 g (3½ oz) brown rice
- ½ ripe avocado, sliced (75 g / 2¾ oz)
- 50 g (1¾ oz) cooked edamame
- 1 small carrot, julienned (50 g / 1¾ oz)
- ½ cucumber, thinly sliced (100 g / 3½ oz)
- 1 tbsp toasted sesame seeds (9 g)
- 2 tbsp low-sodium soy sauce (30 g / 1 oz)
- 1 tsp fresh ginger, grated, optional (3 g)
- red pepper flakes (optional), to taste
- water, as needed
- salt and black pepper, to taste
Method
- Rinse the brown rice well and cook it in a saucepan with twice its volume of water and a pinch of salt for about 25 minutes, until tender and the water is absorbed. Set aside.
- Season the salmon with salt and pepper. Sear it in a nonstick skillet over medium-high heat for 3–4 minutes on each side, until done to your liking.
