Rustic seed bread

More seeds than flour — dense, crunchy outside, great sliced thin.

Rico's note: Cut this loaf into very thin slices and freeze them with sheets of parchment paper between them — then take out only what you need for the toaster.

Ingredients

  • ½ cup almond flour (50 g / 1¾ oz)
  • ½ cup buckwheat flour (60 g / 2 oz)
  • ½ cup sunflower seeds (65 g / 2¼ oz)
  • ½ cup pumpkin seeds (65 g / 2¼ oz)
  • ½ cup flaxseeds (75 g / 2¾ oz)
  • ¼ cup sesame seeds (35 g / 1¼ oz)
  • ¼ cup psyllium husk powder (20 g / ¾ oz)
  • 1 tsp salt (6 g)
  • 4 eggs (200 g / 7 oz)
  • ¼ cup olive oil (40 g / 1½ oz)

Method

  1. Preheat the oven to 180 °C (350 °F) and get a loaf pan ready: silicone, or metal, well lined.
  2. In a large bowl, mix all the dry ingredients: the flours, seeds, psyllium and salt.
