Quantities and times are a starting point: adjust them to your taste. Two things don't change: poultry and ground meat must be cooked all the way through, and allergens — always check the labels.

Roasted sweet potato with cinnamon and nutmeg

Sweetened only by the sweet potato, ready while you shower.

Rico's note: Batch-roasting sweet potatoes on Sunday is one of the best tricks around — in the morning you just reheat.

Ingredients

  • 1 large sweet potato (250 g / 9 oz)
  • ½ tsp ground cinnamon (2 g)
  • 1 tbsp coconut oil (10 g)
  • nutmeg, to taste
  • 15 g (½ oz) chopped walnuts — optional

Method

  1. Preheat the oven to 200 °C (400 °F).
  2. Wash and dry the sweet potato well, without peeling it.
