Roasted salt cod with chickpeas and spinach

Sauté the base; the salt cod goes in only at the end.

Rico's note: A classic Sunday dish, made almost the traditional way — just swap the very hot oven for a gentler one.

Ingredients

  • 200 g (7 oz) salt cod, soaked (desalted) — already soaked and drained
  • 150 g (5½ oz) cooked chickpeas
  • 200 g (7 oz) fresh spinach
  • 1 large onion, chopped (150 g / 5½ oz)
  • 3 cloves garlic, minced (9 g)
  • 1½ tbsp extra-virgin olive oil (15 g / ½ oz)
  • black pepper, to taste

Method

  1. Sauté the onion and garlic in the olive oil until translucent.
  2. Add the chickpeas and let them cook for 2–3 minutes.
