Roasted pumpkin cubes with cinnamon

The oven does the work while you get on with something else.

Rico's note: Slide a sheet pan of these into the oven while you tidy up after dinner; it tastes like dessert, but it's just pumpkin.

Ingredients

  • 300 g (10½ oz) pumpkin, diced
  • 1 tbsp olive oil (10 g)
  • 1 tsp ground cinnamon (2 g)
  • sea salt, to taste

Method

  1. Preheat the oven to 190 °C (375 °F) and line a baking sheet with parchment paper.
  2. Cut the pumpkin into cubes of about 2 cm (¾ in), all roughly the same size so they roast evenly.
