Roast chicken thighs with sweet potato and rosemary

Ingredients
- 4 bone-in, skin-on chicken thighs (480 g / 1 lb)
- 3 medium sweet potatoes, cut into wedges (390 g / 14 oz)
- 2 sprigs fresh rosemary (4 g)
- 4 cloves garlic, crushed (12 g)
- 3 tbsp extra-virgin olive oil (30 g / 1 oz)
- ½ lemon, juice only (15 g / ½ oz)
- 1 tsp sweet paprika (2 g)
- salt and pepper, to taste
Method
- Preheat the oven to 190 °C (375 °F).
- In a large bowl, season the chicken thighs with the paprika, crushed garlic, lemon juice, olive oil, salt and pepper. Toss well to coat.
