Quinoa salad with smoked salmon and avocado

Fresh, quick and full of good fats.

Rico's note: Just right for a Friday lunch, when you don't feel like cooking anything hot.

Ingredients

  • 150 g (5½ oz) cooked quinoa, cooled
  • 100 g (3½ oz) smoked salmon, flaked
  • ½ ripe avocado (80 g / 2¾ oz)
  • ½ cucumber (150 g / 5½ oz)
  • 100 g (3½ oz) cherry tomatoes
  • 1 endive (50 g / 1¾ oz)
  • 2 tbsp extra-virgin olive oil (20 g / ¾ oz)
  • ½ lemon, juice only (15 g / ½ oz)
  • salt and pepper, to taste
  • fresh parsley, to taste — optional

Method

  1. Cook the quinoa according to the package directions, drain well and let it cool.
  2. Dice the avocado and cucumber, halve the cherry tomatoes and separate the endive leaves.
