No oven, no yeast, ready in 20 minutes in a skillet.

Rico's note: For when you get home late from the gym and can't face turning on the oven; the skillet heats up faster than your hunger kicks in.

Ingredients

  • 1 cup gluten-free oat flour (90 g / 3¼ oz)
  • ½ cup sweet cassava starch, polvilho doce (60 g / 2 oz)
  • ½ cup plain yogurt, or coconut yogurt (120 g / 4 oz)
  • 1 tsp baking powder (4 g)
  • ½ tsp salt (3 g)
  • 1 tbsp olive oil (14 g)

Method

  1. In a bowl, mix the flours, baking powder and salt.
  2. Add the yogurt and olive oil. Knead with your hands until you have a soft dough that doesn't stick to your hands. If needed, adjust with a little more polvilho or yogurt.
