Quick polvilho and rice rolls (pão de minuto)

Quick little rolls to go with your main course — no waiting for the dough to rise.

Rico's note: Make these instead of rice when you want to change up the side dish without extra work.

Ingredients

  • 1 cup sweet cassava starch, polvilho doce (120 g / 4 oz)
  • ½ cup rice flour (75 g / 2¾ oz)
  • 1 tsp salt (6 g)
  • 1 tbsp sugar (optional, for a lightly sweet touch) (12 g) — no added sugar: 2 tbsp erythritol (optional, for a lightly sweet touch) (20 g)
  • 1 tbsp baking powder (12 g)
  • 1 egg (50 g / 1¾ oz)
  • ¼ cup olive oil (40 g / 1½ oz)
  • ¼ cup plant-based milk, to get the right consistency (60 g / 2 oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 200 °C (400 °F) and grease a baking sheet.
  2. Mix the dry ingredients: polvilho, rice flour, salt, sugar, if using, and baking powder.
