Quick apple and walnut bread

No yeast, no waiting — from bowl to pan in minutes.

Rico's note: Use up the apples going soft in the fruit bowl; grated with the skin on, nobody notices the difference.

Ingredients

  • 150 g (5½ oz) rice flour
  • 96 g (3½ oz) almond flour
  • 70 g (2½ oz) white or brown sugar — no added sugar: 100 g erythritol
  • 1 tbsp baking powder (12 g)
  • 1 tsp ground cinnamon (2.6 g)
  • 1 small apple, grated with the skin on (100 g / 3½ oz)
  • 50 g (1¾ oz) chopped walnuts
  • 2 eggs (100 g / 3½ oz)
  • 73 g (2½ oz) coconut oil
  • 60 ml (¼ cup) almond milk

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease the pan.
  2. Combine the dry ingredients: the flours, sugar, baking powder and cinnamon.
