Peanut cake

The flavor of paçoca (Brazilian peanut candy), now in slices.

Rico's note: After a workout, a slice of this cake with a yogurt takes care of your hunger and your sweet tooth at the same time.

Ingredients

  • 1 cup peanut flour (60 g / 2 oz)
  • 1 cup almond flour (100 g / 3½ oz)
  • ½ cup white or brown sugar (100 g / 3½ oz) — no added sugar: ¾ cup erythritol (135 g)
  • 1 tbsp baking powder (12 g)
  • 1 pinch salt (0.3 g)
  • 4 eggs (200 g / 7 oz)
  • ½ cup almond milk (120 g / 4 oz)
  • ⅓ cup peanut oil, or coconut oil (66.7 g / 2¼ oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease the pan.
  2. Mix the dry ingredients: peanut flour, almond flour, sugar, baking powder and salt.
