Pea and mint soup

Sweet, fresh and ready in just over 20 minutes.

Rico's note: Keep a bag of frozen peas in the freezer just for this, for nights you don't want to think too hard about dinner.

Ingredients

  • 400 g (14 oz) fresh or frozen peas
  • 1 potato (150 g / 5½ oz) — diced
  • 1 onion (150 g / 5½ oz)
  • 1 handful of fresh mint (10 g)
  • 1 liter (4¼ cups) water
  • 2 tbsp olive oil (20 g / ¾ oz)
  • salt and pepper, to taste

Method

  1. Sauté the onion in the olive oil until translucent, 3 minutes.
  2. Add the diced potato and the water and simmer for 10 minutes.
