Passion fruit peel bread

Makes use of the fruit's peel, with its natural pectin.

Rico's note: Whenever you make passion fruit juice, save the peels to dry and grind; nothing goes to waste and the bread gets a distinctive flavor.

Ingredients

  • 120 g (4 oz) rice flour
  • 120 g (4 oz) gluten-free oat flour
  • 50 g (1¾ oz) passion fruit peel flour
  • 60 g (2 oz) sweet cassava starch (polvilho doce)
  • 1 tsp salt (6 g)
  • 1 tbsp baking powder (12 g)
  • 3 eggs (150 g / 5½ oz)
  • 245 g (8½ oz) plain yogurt
  • 3 tbsp olive oil (30 g / 1 oz)

Method

  1. Preheat the oven to 180 °C (350 °F) and grease the pan.
  2. Mix the flours, cassava starch, salt and baking powder in a bowl.
