Passion fruit cake with seeds

Tangy, fragrant and with the seeds on show.

Rico's note: This is the cake for when you want a break from chocolate — passion fruit brings a different kind of freshness.

Ingredients

  • 2 sour passion fruit (pulp only, with seeds) (100 g / 3½ oz)
  • 1 cup rice flour (158 g / 5½ oz)
  • 1 cup almond flour (100 g / 3½ oz)
  • ⅔ cup sugar (135 g / 5 oz) — no added sugar: ¾ cup xylitol (135 g)
  • 1 tbsp baking powder (12 g)
  • 3 eggs (150 g / 5½ oz)
  • ½ cup coconut oil (100 g / 3½ oz)
  • ¼ cup water, or coconut milk (60 g / 2 oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect. Keep it away from dogs: xylitol is toxic to them.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease the pan.
  2. Halve the passion fruit and scoop out the pulp with a spoon; set half aside for the end.
