Oven-roasted white fish with vegetables

Light, straightforward and ready on one sheet pan.

Rico's note: Use the freshest white fish you can find that day — hake, sea bream or sea bass; the method is always the same.

Ingredients

  • 1 hake or sea bream fillet (200 g / 7 oz)
  • 1 carrot, cut into sticks (100 g / 3½ oz)
  • 1 zucchini, cut into half-moons (100 g / 3½ oz)
  • ½ bell pepper, cut into strips (50 g / 1¾ oz)
  • broccoli florets, to taste (50 g / 1¾ oz)
  • 2 cloves garlic, minced (6 g)
  • fresh thyme and rosemary, to taste
  • 1 lemon (30 g / 1 oz)
  • 1 tbsp olive oil (10 g)

Method

  1. Preheat the oven to 200 °C (400 °F).
  2. Cut all the vegetables into pieces of a similar size and spread them on a baking sheet with the olive oil.
