Oat and rice burger buns

Soft buns for Friday burger night, with no wheat flour.

Rico's note: Bring these to the next barbecue at a friend's place. Nobody notices they're not regular buns until you tell them.

Ingredients

  • 1 cup gluten-free oat flour (90 g / 3¼ oz)
  • 1 cup rice flour (120 g / 4 oz)
  • ½ cup sweet cassava starch, polvilho doce (60 g / 2 oz)
  • 2 tbsp psyllium husk powder (20 g / ¾ oz)
  • 1 tbsp sugar (12 g) — no added sugar: 2 tbsp erythritol (20 g)
  • 1 tsp salt (6 g)
  • 1 tbsp active dry yeast (10 g)
  • 1 cup warm water (240 g / 8½ oz)
  • 2 eggs (100 g / 3½ oz)
  • 3 tbsp olive oil (42 g / 1½ oz)
  • 1 egg yolk, for brushing (17 g / ½ oz)
  • sesame seeds, for sprinkling (10 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. In a bowl, mix the dry ingredients: the flours, cassava starch, psyllium, sugar, salt and yeast.
  2. Add the eggs, olive oil and warm water. Mix vigorously until the dough turns stretchy.
