Oat and cottage cheese bread

A sliceable loaf made with just eggs, oats and cottage cheese, ready in 40 minutes.

Rico's note: This is the loaf for when you want to skip wheat bread but still want something to toast in the morning.

Ingredients

  • 1 cup cottage cheese (200 g / 7 oz)
  • 2 eggs (100 g / 3½ oz)
  • ¼ cup egg whites, 2 whites (60 g / 2 oz)
  • 1 cup oat flour (125 g / 4½ oz)
  • 1 dessert spoon (10 ml) baking powder (8 g)
  • salt and garlic powder, to taste
  • pumpkin seeds, sesame seeds and rolled oats — optional, to decorate

Method

  1. Preheat the oven to 180 °C (350 °F).
  2. In the blender, blend the cottage cheese with the eggs and egg whites until smooth and lump-free.
