Mushroom rojões

Mushrooms marinated in garlic and white wine, sautéed like rojões (northern Portuguese pork bites).

Rico's note: For the day you want a dinner that smells like northern Portuguese cooking without spending hours in the kitchen — 20 minutes of marinating makes all the difference.

Ingredients

  • 600 g (1¼ lb) king oyster or portobello mushrooms, in thick pieces
  • 4 cloves garlic, minced (20 g / ¾ oz)
  • 60 ml (¼ cup) white wine
  • 3 tbsp olive oil (30 g / 1 oz)
  • 400 g (14 oz) potatoes, diced, for oven-frying
  • 1 tsp sweet paprika (3 g)
  • 1 bay leaf (0.2 g)
  • salt and black pepper, to taste

Method

  1. Mix the garlic, white wine, sweet paprika, bay leaf and a drizzle of olive oil in a bowl. Add the mushrooms and let them marinate for 20 minutes.
  2. While the mushrooms marinate, dice the potato, season with olive oil and salt, and roast at 200 °C (400 °F) for 25 minutes, until golden.
