Microwave oat bread

A single-serve bread ready in minutes, ideal for quick toasted sandwiches.

Rico's note: A lifesaver when you want a toasted sandwich but there's no bread in the house — three minutes in the microwave and you've got something to slice.

Ingredients

  • 1 egg (50 g / 1¾ oz)
  • 60 g (2 oz) low-fat Greek yogurt
  • 40 g (1½ oz) oat flour
  • 1 tsp baking powder (4 g)
  • salt, to taste
  • seeds, to taste — optional
  • olive oil, for greasing

Method

  1. In a bowl, whisk the egg with the yogurt until smooth.
  2. Add the oat flour, baking powder and a pinch of salt, and stir until you have a thick batter. Fold in some seeds, if you like.
