Feta, roasted bell pepper, red onion and olives

A Mediterranean creation in the Italian style — not a regional pizza. It brings together tomato, feta, roasted red bell pepper, black olives, red onion and oregano. The pepper and onion are cooked first to concentrate their flavor and keep them from releasing water in the center; the feta goes on in small pieces, so the tomato still shows.

Rico's note: A Mediterranean pizza still needs room. If each ingredient covers the one before, you lose texture and the base gets too much water.

Ingredients

  • 167 g (6 oz) pizza flour, from base B01 — ingredients 1–4 = one 275 g / 9½ oz B01 dough ball, already risen
  • 103 g (3¾ oz) water, from base B01
  • 4.7 g salt, from base B01
  • 0.3 g dry baker's yeast, from base B01
  • 5 g flour, for shaping
  • 65 g (2¼ oz) peeled tomatoes, no added salt, crushed
  • 60 g (2 oz) feta cheese
  • 70 g (2½ oz) red bell pepper
  • 35 g (1¼ oz) red onion
  • 25 g (1 oz) pitted black olives
  • 8 g extra-virgin olive oil
  • ½ g dried oregano

Method

  1. Heat a pizza stone or steel at 250–275 °C (480–525 °F) for 45–60 minutes. Drain the feta and olives in separate containers.
  2. Cut the bell pepper into 5 mm strips and the onion into thin half-moons. Heat 5 g of the olive oil in a skillet and cook both over medium heat for 8–10 minutes, until pliable and with no free liquid.
