Mango and lime sorbet

Just two ingredients and five minutes for a tart, refreshing sorbet.

Rico's note: Keep a bag of frozen mango on hand and you can make this any time of year, even when fresh mango is out of season.

Ingredients

  • 300 g (10½ oz) frozen mango cubes
  • 1 lime, juice only (30 g / 1 oz)
  • 50 ml (3½ tbsp) water

Method

  1. Put the frozen mango, lime juice and water in a food processor.
  2. Blend until creamy, stopping to scrape down the sides as often as you need to.
