Low-carb macadamia bread

Very rich in good fats, with an intense nutty flavor.

Rico's note: It's dense and fills you up fast; one thin slice is plenty alongside a soup at dinner.

Ingredients

  • 224 g (8 oz) macadamia flour (finely ground macadamia nuts)
  • 56 g (2 oz) coconut flour
  • 27 g (1 oz) psyllium powder
  • 1 tbsp baking powder (12 g)
  • 1 tsp salt (6 g)
  • 4 eggs (200 g / 7 oz)
  • 240 ml (1 cup) water
  • 20 ml (1½ tbsp) avocado oil (or coconut oil)

Method

  1. Preheat the oven to 180 °C (350 °F) and line the loaf pan with parchment paper.
  2. Mix the flours, psyllium, baking powder and salt in a bowl.
