Low-carb almond and coconut bread

Low in carbs, very filling, great with butter.

Rico's note: After a workout, cut a thick slice, top it with two eggs and you're set for the rest of the morning.

Ingredients

  • 1½ cups almond flour (150 g / 5½ oz)
  • ½ cup coconut flour (60 g / 2 oz)
  • ¼ cup psyllium husk powder (40 g / 1½ oz)
  • 2 tsp baking powder (8 g)
  • 1 tsp salt (6 g)
  • 4 large eggs (200 g / 7 oz)
  • ¼ cup melted coconut oil, or olive oil (55 g / 2 oz)
  • 1 cup warm water (240 g / 8½ oz)

Method

  1. Preheat the oven to 180 °C (350 °F). Grease a loaf pan and line it with parchment paper.
  2. In a bowl, thoroughly mix all the dry ingredients: the flours, psyllium, baking powder and salt.
