Lighter Black Forest cake

Layers of chocolate, cherries and a mock coconut whipped cream.

Rico's note: The cake to bring when you need to impress without spending the whole afternoon in the kitchen — assembly takes some work, but the cake itself is quick.

Ingredients

  • 1½ cups almond flour (144 g / 5 oz) — for the batter
  • ½ cup cocoa powder (45 g / 1½ oz) — for the batter
  • ½ cup sugar (100 g / 3½ oz) — for the batter; no added sugar: ¾ cup erythritol (142 g)
  • 1 tbsp baking powder (12 g) — for the batter
  • 4 eggs (200 g / 7 oz) — for the batter
  • ½ cup coconut oil (103 g / 3¾ oz) — for the batter
  • ¼ cup water (60 g / 2 oz) — for the batter
  • 1 cup pitted cherries, fresh or frozen (150 g / 5½ oz)
  • 1 cup coconut cream (solid part of the can, chilled) (225 g / 8 oz)
  • 2 tbsp powdered sugar (24 g / ¾ oz) — no added sugar: 3 tbsp powdered erythritol (36 g)
  • 20 g (¾ oz) 100% cacao chocolate, shaved — to decorate

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F). Grease two 18 cm (7 in) round cake pans.
  2. Mix the dry ingredients for the batter: the almond flour, cocoa, sugar and baking powder.
