Rico's note: Make this when you have too many lemons in the fridge and want a filling that cuts through the sweetness of the cake.

Ingredients

  • 3 egg yolks (54 g / 2 oz)
  • ¼ cup sugar (50 g / 1¾ oz) — no added sugar: ⅓ cup erythritol (67 g)
  • ⅓ cup lemon juice (80 g / 2¾ oz)
  • 1 lemon, zest only (3 g)
  • 3 tbsp firm coconut oil (42 g / 1½ oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. In a small saucepan, off the heat, whisk the egg yolks with the sugar, lemon juice and lemon zest.
  2. Cook over low heat, at about 80 °C (176 °F), whisking constantly, for 5–7 minutes.
