Lemon chia cake

A fresh lemon cake with a chia gel that replaces some of the fat.

Rico's note: The chia works here just as it would in porridge — soaked in water, it binds the batter and nobody notices it's there.

Ingredients

  • 2 tbsp chia seeds (22 g / ¾ oz)
  • ½ cup water, to hydrate the chia (120 g / 4 oz)
  • 1½ cups rice flour (237 g / 8½ oz)
  • 1 cup almond flour (96 g / 3½ oz)
  • ½ cup sugar (100 g / 3½ oz) — no added sugar: ¾ cup erythritol (142 g)
  • 1 tbsp baking powder (12 g)
  • 2 lemons (zest only)
  • 2 eggs (100 g / 3½ oz)
  • ½ cup coconut oil (103 g / 3¾ oz)
  • ¼ cup lemon juice (60 g / 2 oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Mix the chia seeds with the water and let stand for 15 minutes, until they form a gel.
  2. Preheat the oven to 180 °C (350 °F) and grease the pan.
